These Strawberry Cheesecake Cookies Are a Batch Made in Heaven For Valentine’s Day

Chewy and oh-so-strawberry, you will fall in love with these Strawberry Cheesecake Cookies.

Behind Christmas and Thanksgiving, Valentine’s is definitely in my top ranking for favorite holidays. Of course I love that Heart Day lets you celebrate the love of your life—whoever that is (your BFF, your S.O., or even yourself)—but I especially love the built-in excuse to eat copious amounts of chocolate and sweet treats. Am I silly? Oh well!

For Valentine’s Day, I love to get in the kitchen and show my appreciation for the loves in my life by whipping up some delicious treats. And one of the treats I’m making this Valentine’s Day is Strawberry Cheesecake Cookies!

These cookies are so easy to make because they are made with a strawberry cake mix. Can you believe it?! It really is the perfect ingredient to make cookies because all of the cake mix brands have already put flour, baking soda, salt, and other necessary cookie ingredients right into the mix for you! These Strawberry Cheesecake Cookies are soft, chewy, and a little more cake-like in texture, but pack a big punch of strawberry and cream cheese flavor, making it taste just like a delectable strawberry cheesecake. Yum!

With some Heart’s Day-inspired sprinkles, they are sure to make a cute and tasty treat for your Valentine or even yourself!

Read on below to learn how to make some Strawberry Cheesecake Cookies for you or your sweet this Valentine’s Day!

Here’s What You’ll Need:

  • 8 oz. of cream cheese, room temperature
  • 1/2 cup of butter, room temperature
  • 1 egg
  • One 15 oz. box of strawberry cake mix
  • 1 cup of white chocolate chips
  • 1/4 cup of powdered sugar
  • Valentine sprinkles (optional)

Here’s How to Make Your Strawberry Cheesecake Cookies:

Start your Strawberry Cheesecake Cookies by adding cream cheese and butter (both room temperature) to a large mixing bowl and beat together until smooth. You can mix it by hand with a rubber spatula or with a hand mixer. Next, add one egg and mix again until the ingredients are combined.

Now, pour in your box of dry strawberry cake mix and stir the ingredients together until you get a light pink dough like shown below.

After your dough has formed, add in one cup of white chocolate chips and fold them into the dough. You can also add semi-sweet chocolate chips, sprinkles, or any other toppings you’d like in place of the white chocolate chips. You can even go without! I find that the white chocolate chips help give it that delicious cheesecake flavor alongside the cream cheese.

Set aside your dough and pour 1/4 cup of powdered sugar into a shallow dish. Using a cookie scoop, or a tablespoon if you don’t have one, scoop out your cookie dough and form it into a round ball. Place the dough ball into the powdered sugar and gently roll it around until the entire cookie is covered in powdered sugar.

Then, place the cookie onto a parchment paper-lined cookie sheet.

Afterwards, if you so choose, add some Valentine sprinkles to the top of each cookie. I think it makes them more festive, especially if you’re making them for Valentine’s Day!

Now, place your sheet of cookies into the refrigerator for at least 30 minutes before baking.

Once they are ready to bake, place the cookies into a 350°F oven for 8-10 minutes. You don’t want the cookies to completely brown so they remain pink.

Cool the cookies on the baking sheet for a few minutes before transferring them to a cooling rack.

After the cookies are cooled, enjoy them with a glass of milk or a non-dairy alternative for a delicious treat or wrap them up as a delicious Valentine’s Day gift!
